We Konkanis love dosas and idlis for breakfast. Surnali is a thick pancake made of rice and coconut. These pancakes are also made sweet adding jaggery, but we love the savory ones called as Cheppi Surnali.
Ingredients:
Medium Grain Rice - 1 cup
Grated Coconut - 1/4 cup
Thin Poha/Parched Rice/Beaten Rice - 1/2 cupFenugreek/Methi seeds - 1/4 tsp
Salt
Oil preferably Coconut Oil
How to make Konkani Surnali:
- Soak rice and fenugreek seeds in water for about 5 hrs. Wash rice well.
- Grind rice, grated coconut, salt and parched rice to a fine paste. Batter consistency is thick and not runny. Ferment the batter overnight in a warm place.
- Heat a pan and pour a ladle full of batter. Spread it evenly in a circular pattern, slightly thick like a pancake or a set dosa. Drizzle little oil.
- Flip the dosa when the pores can be seen and colour changes. Roast the other side and Surnali is ready to serve with chutney.
- In case, you love the sweet Surnali, add grated jaggery while grinding. Sweet surnalis taste great with a dollop of butter or ghee (clarified butter).
