A popular Bollywood dessert, Gajar ka Halva.
Ingredients:
Grated Carrot - 3 cups
Whole Milk - 2 cups
Brown Sugar - 1/4 cup
Almonds/Badam - 5
Pistachios/Pista - 5
Cardamom/Elaichi pods - 2
Saffron/Kesar - few strands
Ghee/Clarified Butter - 2 tbsp

- Slice almonds and pistachios. Grind cardamom to a fine powder.
- Heat ghee in a thick bottom vessel and add grated carrot. Fry for about 5 minutes.
- Add milk to the fried carrots and cook till milk reduces to more than half. Add almond, pistachio slices, brown sugar, cardamom powder, saffron and continue stirring.
- Continue cooking at low flame till moisture is lost completely.
Garnish with nuts and serve Gajar ka Halwa warm or chilled.
