Egg Bhurji or Anda Bhurji is an Indian recipe of scrambled eggs with veggies like capsicum/green bell pepper, green peas, tomatoes. An easy and quick fix on a busy day.
Ingredients:
Eggs - 4
Onion - 1 medium
Capsicum/Bell Pepper - 1 big
Green Chilly Paste - 1/2 tsp
Coriander/Cilantro leaves - few sprigs
Cumin/Jeera seeds - 1 tsp
Black Pepper Powder - 1/4 tsp
Ginger Garlic Paste - 1 tbsp
Turmeric/Haldi - 1/4 tsp
Oil - 1 tbsp
Salt
How to cook Indian Egg Bhurji:

How to cook Indian Egg Bhurji:
- Finely chop onions, capsicum and cilantro. I used a combination of yellow, green and red capsicum.
- Heat about 1 tbsp oil in a kadhai/wok and add cumin seeds, ginger garlic paste and green chili paste. You can use finely chopped ginger, garlic and green chilies instead of paste. Sauté for few seconds. Then add finely chopped onions and little salt.
- After onions turn soft, add chopped capsicum. Stir-fry till capsicum is cooked. You can add any other veggies like cabbage, green peas along with capsicum.
- Crack the egg shells and add eggs in a bowl. Add little salt, black pepper powder to the eggs and beat well. Pour the whisked eggs in the wok. Continue cooking while stirring till eggs are cooked and moisture is lost. You can add 1/4 tsp garam masala or any other spice mix as well.
- Garnish Egg Bhurji with finely chopped cilantro and serve with roti or bread.
