How to make Aloo Tikki Burger:
- Let the boiled potatoes cool completely. Peel off the skin and mash the potatoes well. Alternately, you can grate the potatoes.
- Crush cumin seeds in a mortar pestle to a coarse powder. Finely chop cilantro leaves.
- Heat about 2 cups water in a pot. When water starts boiling, add green peas and cook for a minute. Turn off the heat. Drain the water and add the cooked peas in a strainer or colander. Set it aside for 20 minutes, so that most moisture is gone.
- In a mixing bowl, add potatoes and cooked peas. Slightly mash the peas. Now add corn starch, cilantro, chat masala, chili paste, chat masala and salt to the bowl. Mix all the ingredients well. Taste for seasonings. Add more salt and chili paste if required. You can also add 1/4 tsp garam masala if you like.
- If corn starch is not available, you can use bread crumbs.
- Divide the potato mix into 5 round balls. Flatten each one between your palms and shape each one like a patty. Coat each potato patty with bread crumbs.
- Heat a pan for shallow frying. Add about 2 tbsp oil. Place the patties on the hot pan and fry them until both sides turn nice golden brown. You can deep fry the patties as well.
- Now time to assemble the burgers the way you like. Apply tomato ketchup to the lower half of the bun. Place a lettuce leaf, followed by the potato burger, tomato slice, onion slice. Place the other half of the bun and enjoy Aloo Tikki Burger.
- Along with ketchup, you can also apply Mayonnaise or Ranch. Or a slice of cheese too, if you like.
- For a different flavor, try Mint Cilantro Chutney and Dates Tamarind Chutney, instead of Ketchup.
Just a fantastic burger Uma,love it.
